Beef ball is one of the popular dishes of Vietnamese people, instead of buying outside, making beef balls at home is quite easy and safe. Today, Where to Go, I will show you how to make crispy and nutritious beef balls.
Ingredients:
- 1 kg Ground beef
- 20 gr Potato flour (or substitute with tapioca flour)
- 6g Floating Flour
- 1 purple onion
- 1 Ginger root
- 7 gr Minced Garlic
- Ice cubes (clumps of ice)
- Other seasonings: fish sauce, salt, sugar, pepper, monosodium glutamate, seasoning, cooking oil
Note: Should choose beef that has both lean, tendon and fat to make the finished beef ball more delicious, both tough and crispy.
Instructions:
1. Mix Beef Seasoning Mixture
Use 5 tablespoons of fish sauce, 5 tablespoons of cooking oil, 1 teaspoon of pepper, 1 coffee of seasoning seeds, ½ coffee of monosodium glutamate, ginger, minced garlic and mix well. In another bowl, mix together the potato starch and baking powder.
2. Marinated Beef
The purchased beef is put in a large bowl, then add the mixed seasoning mixture and squeeze it to absorb the seasoning. Divide the marinated beef into 3-4 portions depending on the size of the meat grinder at home.
Put each piece of meat in a sealed plastic bag, put it in the freezer for about 1-2 hours for the meat to harden.
3. Grind Beef Into Raw Ham
Take 1 part of beef into the blender, grind at high speed for about 1-2 minutes until the meat is broken up. Stop the machine, use chopsticks to separate the loose meat without clumping for easier operation.
Quickly add 1 tablespoon of previously crushed ice cubes to the meat and then grind until the mixture is evenly mixed into a smooth mass. Before finishing, add cooking oil and grind for another 30 seconds.
Put the finished minced meat in a bag and store it in the freezer, then take the next piece of meat and grind it in the same way.
Put ice cubes in a bag and break them into small pieces.
All the ground beef is done, put it all in the blender, quickly add 2-3 tablespoons of crushed ice to the meat and then grind the beef mixture until it is evenly mixed like a raw ham.
Note:
- Should divide the meat into parts to grind to help the meat be smoother, grind faster
- The meat you use is beef, so all ground meat must be kept at a cold temperature, when the machine is hot, the meat will not be cooked and friable.
- Grind each part and the remaining meat remains in the freezer to ensure a cold temperature, the minced beef must also be preserved similarly.
- Do not use too much baking powder because when boiled or fried, the beef ball will swell and then deflate and not keep the sweetness of the beef.

4. Shaping and Processing Beef Balls
Shaping
Using gloves (can be bought at the drugstore or buy plastic gloves at the market), rub a little cooking oil on both hands.
Beef balls are shaped in the simplest form by hand molding into small and large balls depending on your preferences.
If you are a person who is not too focused on appearance, you can use a spoon that has been smeared with cassava cooking oil into chunks as you like.
Cooked by boiling
Bring 1 pot of water to a boil, add 1 red onion cut in half and 1 tablespoon seasoning to make the beef balls sweeter when boiled.
Put each shaped meatball into the pot of boiling water, give it a quick turn to cook the meatballs at the same time.
When the meatballs come into contact with boiling water, they will gradually cook, always floating on the surface of the water, which proves that the operation is correct.
Boil until beef balls float to the surface, then take them out and drop them in a bowl of ice water for about 3 minutes, then take them out and cover them.
Note: The water must be very boiling before dropping the beef balls in, otherwise the beef balls will not be tough and crispy. When putting beef balls in a bowl of ice water, it makes the beef white and crispy.
Cooked by frying
After the pellets are successfully shaped, put them in a bowl of ice water for easy shaping. Then, take out the beef balls to drain.
Fill the pan with oil and heat it up, until the oil is hot, add the beef balls to fry. Fry until cooked, the outer crust is golden and almost finished.
Enjoy and Preserve
After being cooked, beef balls have an attractive and round appearance, the beef still retains its sweetness, toughness and crunchiness.
Whether boiled or fried, the finished beef ball should be drained (drained oil), enjoyed immediately by eating without chili sauce or ketchup.
Uneaten beef balls can be placed in the freezer compartment of the refrigerator (for 1 month).
