Mixed Vegetables

Ingredients:

  • Assorted vegetables (such as carrots, broccoli, cauliflower, bell peppers, zucchini, etc.)
  • Olive oil
  • Salt and pepper to taste
  • Garlic powder
  • Onion powder
  • Mixed herbs (such as thyme, oregano, rosemary)
  • Optional: grated Parmesan cheese

Instructions:

  1. Wash and prepare the vegetables by cutting them into bite-sized pieces.
  2. In a large pan, heat a drizzle of olive oil over medium heat.
  3. Add the prepared vegetables to the pan. You can start with harder vegetables like carrots and broccoli, and add softer ones like bell peppers and zucchini a little later.
  4. Season the vegetables with salt, pepper, garlic powder, and onion powder. You can adjust the seasonings to your taste.
  5. Stir the vegetables occasionally to ensure even cooking. You want them to be cooked but still slightly crunchy.
  6. As the vegetables cook, sprinkle in a pinch of mixed herbs for added flavor. You can also add a little more olive oil if needed.
  7. Once the vegetables are tender, remove the pan from the heat.
  8. Transfer the cooked mixed vegetables to a serving dish. If desired, sprinkle some grated Parmesan cheese on top for extra flavor.
  9. Serve the mixed vegetables as a side dish with your favorite main course. They also make a great addition to pasta dishes or rice bowls.
